Raw Toffee Apples

Warning: It's a messy eat and leaves you looking ghoulish, and ready to scare the neighbours this halloween :)

Ingredients
Red apples
Wooden sticks (chop sticks work well)
12 dates
1 tsp lucuma (optional)
1 heaped tbsp coconut oil
1/4 cup coconut milk (or other non-dairy milk)
Raw chocolates

Method
1. Soak dates in water for 6 hours
2. Put in blender with lucuma, coconut oil and blend until creamy. If you need more liquid slowly add the non-dairy milk to get a cream consistency
3. As the caramel begins to cool, it will set more. The consistency should be creamy and smooth enough to spread all over the surface of an apple
4. Roll in Dr Gayes Super-Spoonful and press into the caramel
5. Leave in fridge to set (2 hours is plenty)
6. Melt the raw chocolate in a glass bowl over a pan of warm water until creamy
7. Drizzle over set toffee apple
8. Put back in the fridge to harden
